How Toffee Peanut Butter Brownie Bars Were Born

Sometimes, the best dessert or want to combine two or three different desserts in the one. That’s the case with Toffee Peanut Butter Brownie Bars. I had friends coming over and realized I didn’t have anything to snack on. I looked in the fridge for some cookie dough and realized I only had half a tube . I knew I had a brownie mix in my pantry and thought peanut butter and chocolate sounds perfect! I wondered what else I could add that would make it even better. I found a bag of toffee chips in my pantry with the brownies and deliciousness was born in my kitchen.  Toffee Peanut Butter Brownie Bars was a hit!

Toffee Peanut Butter Brownie Bars is Versatile

Don’t have toffee chips in your pantry?  Try caramel chips, M&Ms, or even chocolate chips.  Any candy candy will work in Toffee Peanut Butter Brownie Bars! I’m thinking about next time up some Snickers in the food processor and using those. Get creative, use what you like in your Toffee Peanut Butter Brownie Bars.  You could also use any type of refrigerated cookie dough you like.  Try chocolate chip or sugar cookie for a change.

Toffee Peanut Butter Brownie Bars Recipe

Ingredients

  • ½ tube peanut butter cookie dough
  • 1 8x8 size brownie mix plus the ingredients to make according to directions (egg, oil, water)
  • ½ bag toffee pieces

Instructions

  1. Heat oven to 350 degrees F.
  2. Press the cookie dough into the bottom of an 8x8 or 9x9 baking pan.
  3. Sprinkle with toffee pieces.

Toffee Peanut Butter Brownie Bars are Great for Bake Sales

With school starting up, that means bake sales for all kinds of clubs will be starting.  Toffee Peanut Butter Brownie Bars are great for bake sales.  They hold up well, stay fresh for quite a while, and with  the combination of peanut butter and chocolate, they sell out fast!  Make up a bunch for your favorite bake sale fundraiser and watch them go!

 

½ tube peanut butter cookie dough

1 8×8 size brownie mix plus the ingredients to make according to directions (egg, oil, water)

½ bag toffee pieces

 

Heat oven to 350 degrees F.

Press the cookie dough into the bottom of an 8×8 or 9×9 baking pan.

Copycat Red Lobster Lava Cake

Any recipe that starts out with chocolate, butter, and sugar has GOT to be good!  And this recipe is better than good.  It’s amazing!  I’ve ordered lava cake at many restaurants, but Red Lobster has to be the best.  Unfortunately, the one near me stopped serving it, despite my protests, so I figured out how to make Copycat Red Lobster Lava Cake at home.  Remarkably, it’s pretty easy and it makes not just one Copycat Red Lobster Lava Cake, but six!  Now I can have them ready in the fridge for whenever I need my chocolate fix!

How Does the Center of a Copycat Red Lobster Lava Cake Stay Liquid

That was a question I always asked myself when I was ordering these wonderful little treats.  The trick is freezing Copycat Red Lobster Lava Cake in an oven proof, single serve dish.  You bake them frozen, and not completely, so the center is hot but gooey and delicious, the trademark of a Copycat Red Lobster Lava Cake.  But shhhh!  Don’t tell everyone the secret!  Let them wonder how you did it!

Ingredients

  • 6 oz chocolate chips
  • 10 T butter, cut into pats

  • 3 T cocoa powder
  • ¾ t baking powder
  • 3 eggs

Instructions

  1. Spray 6 custard cups with cooking spray; set aside.
  2. In a small saucepan, melt the chocolate chips over medium-low heat until smooth.
  3. Add the butter, a little at a time, and stir until incorporated.
  4. Add the sugar and stir. Heat until smooth and melted.
  5. Pour the chocolate mixture into a large bowl and set aside.
  6. In a small bowl, mix the flour, cocoa powder, and baking powder.
  7. With a hand mixer, mix the flour mixture into the chocolate mixture.
  8. Add the eggs, one at a time and mix well.
  9. With the mixer on the medium setting, mix for 6 minutes.
  10. Pour the cake batter into the prepared custard cups evenly. Cover with plastic wrap and freeze at least overnight.
  11. Heat oven to 375 degrees F.
  12. Remove plastic wrap and bake cakes 15 to 18 minutes, until the edges are firm and the center is moist.
  13. Remove from oven and cool for 5 minutes.
  14. Invert on a serving plate and serve warm.

Seriously, why would you give delicious Copycat Red Lobster Lava Cake to company?  Oh…wait.  Yeah, I probably shouldn’t hog these all to myself, but they are so good!  If you need to, you can multiply this recipe and make a big batch for a gathering.   You might have to let Copycat Red Lobster Lava Cake cook another minute or three, with more than 6 in the oven.

Ingredients:

Simple Times, Simple Chocolate Syrup Recipe

I remember as a young girl getting a sundae with Hershey’s syrup on it from my mom.  Those were easy, wonderful days as a kid.  You can still get the syrup in a can at the grocery store, but I found I love making it myself at home.  This Decadent Chocolate Syrup recipe is easy to make, and makes a great addition to anything that you would add chocolate syrup to, including coffee, milk, angel food cake, or a bowl of strawberries!  Personally, I love Decadent Chocolate Syrup drizzled over fruited muffins, like blueberry streusel.  It makes a fantastic topping for ice cream as well.

Decadent Chocolate Syrup Recipe: Natural and Fresh

I love making things at home that I can revamp with more natural ingredients.  Decadent Chocolate Syrup is one of those things.  Instead of high fructose corn syrup, I use natural raw sugar or sometimes regular white sugar.  A great natural cocoa powder is key to the best flavor.  I’ve always used Hershey’s Cocoa Powder in my Decadent Chocolate Syrup recipe.  It provides a rich flavor that is synonymous with chocolate syrup.

Best Chocolate Milk with Decadent Chocolate Syrup

My  mom always made chocolate milk with chocolate syrup from a can she kept in the refrigerator.  I started that with my children, with Decadent Chocolate Syrup that I made from scratch.  They love it, and it’s a great, natural way to get them to drink milk when they really want something a little sweet.  I think it even tastes better than what mom used to make.  But don’t tell her that!

 

1 1/2 C water

1 3/4 C raw sugar (or 1 1/2 C white sugar)

1 C cocoa powder

1 T vanilla

dash of salt

 

Place the water, sugar, and cocoa powder in a heavy saucepan.

Heat over medium heat and simmer until syrup starts to thicken, stirring constantly.

Remove from heat; add salt and vanilla.  Stir well.

Serve warm, or cool and store in a glass container in the refrigerator.

Leprechaun Hats Make A Fun Day with Your Kids

St. Patrick’s Day is nearly here, and what better way to enjoy the day than with some great treats, like Leprechaun Hats?  They are adorable, and fun to make with your kids!  A few simple ingredients turns into little works of art that are great for any St. Patrick’s Day themed parties.

Tips and Tricks for Leprechaun Hats

Sometimes you have to make something to realize what you did wrong.  You get the advantage: I’ve already made the mistake!  When making Leprechaun Hats, look for the candy coating bark or Wilton candy disks.  When they cool, they are hard and won’t melt in your hands as you are trying to work with them to assemble the hats.  You can find candy bark in the baking section of your local grocery, and they might just have the Wilton disks too.  I find mine in the baking pan aisle, with other cake making supplies.  That’s where I found the green icing coloring too.

St. Patrick’s Day Leprechaun Hats ~ An Fun Day with Your Kids!

Ingredients

  • 1 bag regular size marshmallows
  • 1 bag chocolate candy bark/disks
  • 1 bag white chocolate candy bark/disks
  • 1 vial green icing colorant
  • 1 pkg Fudge Stripes Cookies
  • sugar sprinkles
  • toothpicks
  • plastic icing bag

Instructions

  1. Melt the chocolate bark in a double boiler or microwave until hot and smooth.
  2. Cover a cookie sheet with parchment or wax paper.
  3. Spear a marshmallow with a toothpick and swirl in the chocolate, covering the top and sides completely. Let any excess chocolate drip off into the pan.
  4. Move to the cookie sheet, carefully removing the toothpick with a fork and placing the marshmallow white side down.
  5. Continue with the rest of the marshmallows.
  6. When the coating on them is set, melt the white chocolate bark in a clean pan. Stir in enough of the green colorant to make the chocolate a pretty Kelly green.
  7. Fill the icing bag with the green chocolate and clip the tip off so you can pipe a small thread of chocolate. Flip the cookies so they are chocolate side up, and pipe some of the green chocolate around the center hole.
  8. Sprinkle with sugar sprinkles, if using.
  9. Place a marshmallow, white side down, onto the green frosting and press down lightly to fuse the two and push out some of the green chocolate out around it.
  10. Continue until all the marshmallows are paired with a cookie.
  11. With the leftover green chocolate, make clovers on the sides of the marshmallow by placing three or four dots of chocolate.
  12. Let the chocolate set up and you have an adorable treat!

Leprechaun Hats Aren’t Just for St. Patrick’s Day!

Make these wonderful treats for other holidays too, such as President’s Day (Lincoln’s hat), New Year’s Eve, as a topping for snowmen in the winter, or even pilgrim’s hats at Thanksgiving!  They would make great place card holders to lean paper against for your Thanksgiving table.  Don’t keep Leprechaun Hats just for St. Patrick’s Day!
