Talk about a super cute Halloween recipe! These spiders are super tasty, easy to make and really cool looking! If you love Halloween recipes as much as I do, then be sure to check out my post on 100 Amazing Halloween Recipes here! There are all of kinds of fun recipes like candy corn drinks to mummy dip. These spider cookies are perfect for a Halloween party or just a fun snack for the kids lunches or when they get home from school. My 3 year old loved helping me make these too. Enjoy!

Spooky Spider Cookies

Items Needed:

  • Any type of homemade cookie – you can use a store bought refrigerated sugar cookie or homemade cookie recipe – I used peanut butter refrigerated dough
  • Reese’s Peanut Butter Cup
  • Candy Eyes Chocolate Chips 2

Directions:

  • Bake Cookies as directed. As you pull them out of the oven use a teaspoon-measuring spoon to make divots in the middle of the cookie. 3
  • Allow cookies to completely cool.
  • Prepare your drizzle for the legs by adding a small amount of chocolate chips to a bowl and microwave them in intervals of 12 seconds until they are completely melted. 4
  • Place Your Reese’s in the middle of the cookie where your divot is 5
  • Take your candy eyes and place a dab of melted chocolate on the back and stick to the side of the Reese’s
  • Use your chocolate drizzle to make spiders legs on the cookie – I used the smallest tip on my Wilton cake decorating set and it worked great! 6
  • Let dry and add eyes 7
  • Enjoy!

Meet the Cookie of the Season, Pumpkin Cheesecake Snickerdoodles

I can’t get enough pumpkin.  Pumpkin spice lattes, pumpkin pie, pumpkin bread.  It’s all on the menu at my house.  But this year, I added a new pumpkin treat:  Pumpkin Cheesecake Snickerdoodles.  You read that right.  I love snickerdoodles, and the chance to combine them with pumpkin and then add cheesecake was too good to pass up.  I made a batch of these gems, and within hours, they were gone.  Every last one of them eaten up with smiles and happiness.  I’d have to say, Pumpkin Cheesecake Snickerdoodles were a hit.

Easy Ingredients in Pumpkin Cheesecake Snickerdoodles

The ingredients in Pumpkin Cheesecake Snickerdoodles are all things I keep in my pantry, so it makes whipping up a batch easy.  While the original recipe called for all purpose flour, for this batch I tried substituting spelt flour.  I think my family liked them better.  Instead of being the flat crispy favorite that snickerdoodles usually are, the heartier spelt flour made Pumpkin Cheesecake Snickerdoodles stay puffy, tender, and have a great bite.  I found the spelt flour in the health food section of the grocery store.  It works well in many things, and provides a heartier texture.

Pumpkin Cheesecake Snickerdoodles Recipe

Ingredients

  • 1 C (2 sticks) butter, room temperature
  • 1 C sugar
  • ½ C brown sugar, packed
  • ¾ C pumpkin puree
  • 1 egg
  • 2 t vanilla extract
  • 3 ¾ C flour (all purpose or spelt)
  • 1 ½ t baking powder
  • ½ t salt
  • ½ t cinnamon
  • ¼ t nutmeg
  • Filling:
  • 1 8 oz pkg cream cheese, room temperature
  • ¼ C sugar
  • 2 t vanilla
  • Coating:
  • ½ c sugar
  • 1 t cinnamon
  • ½ t ground ginger
  • ¼ t allspice

Instructions

  1. In a stand mixer, cream the butter and sugars until fluffy.
  2. Add the pumpkin, egg, and vanilla. Mix well.
  3. In a large bowl, mix the flour, baking powder, salt, cinnamon, and nutmeg.
  4. Slowly add to the wet ingredients, mixing until well incorporated.
  5. Refrigerate for about an hour to firm up the dough.
  6. While the dough is firming, blend the filling ingredients with a mixer or whisk. Refrigerate an hour with the dough.
  7. Heat oven to 350 degrees F.
  8. Press about a tablespoon of dough into a small, flat round. Spoon a small amount of the filling into the center and wrap the dough around it.
  9. Mix the coating ingredients in a shallow bowl.
  10. Roll the cookies in it, coating the outside.
  11. Place on an ungreased cookie sheet.
  12. Bake 13-15 minutes, until cookies are firm and lightly browned.
  13. Remove to paper toweling to cool.
  14. Serve warm or room temperature.

Pumpkin Cheesecake Snickerdoodles for Bake Sales and Fall Gifts

Pumpkin Cheesecake Snickerdoodles are a hearty little cookie that not only freeze well, but travel well too!  You can use these for fantastic bake sales submissions and ship them as gifts as they hold up well, and are a unique cookie that draws people in.

 

1 C (2 sticks) butter, room temperature

1 C sugar

½ C brown sugar, packed

¾ C pumpkin puree

1 egg

2 t vanilla extract

3 ¾ C flour (all purpose or spelt)

1 ½ t baking powder

½ t salt

½ t cinnamon

¼ t nutmeg

 

Filling:

1 8 oz pkg cream cheese, room temperature

¼ C sugar

2 t vanilla

 

Coating:

½ c sugar

1 t cinnamon

½ t ground ginger

¼ t allspice

Slow Down and Have a Tea Party with Jelly Shortbreads

You don’t often sit down to tea with your friends anymore.  We are a society that is always on the go, especially if we have kids.  When your schedule is hectic, it’s the perfect time to schedule time with someone, whether that be your kids, friends, or family, to sit down, take a breath, and maybe have a grown-up tea party!  Every tea party needs fantastic treats, and these thumbprint style Jelly Shortbreads are the perfect addition to finger sandwiches and your favorite tea blends.

Luscious Jellies Make Delicious Jelly Shortbreads

I love to frequent farmers markets and one of the things I look for are unique jams and jellies.  I was recently at a beautiful market and found something I’ve never seen before: Queen Anne’s Lace Jelly.  It has a beautiful golden color, and the flavor…WOW!  I thought it would be really herbal, but it’s actually pretty darn citrusy and light.  Paired with the rich and buttery shortbread crust, they are perfect for the delicious and beautiful Jelly Shortbreads.  Choose a jelly that you like on a simple piece of toast, and you’ll love it in Jelly Shortbreads.  Jams work too, but they might end up a little lumpy in the final cookies as it really doesn’t melt much.  Jelly will melt and create a pretty little puddle that looks like glass when it cools.  The choice is yours!

Ingredients

  4. Using a mini-muffin pan, roll teaspoonfuls of dough into balls and place in the muffin cups.
  5. Press flat in the muffin cup.
  6. Bake 20 minutes.
  7. Remove from oven and using a wooden tart tamper or spoon, press the center of each cookie into a cup shape. Fill with about half a teaspoon of jelly or jam.
  8. Return to the oven and bake another 6 minutes.
  9. Let cool in the tin for 4-5 minutes. Using a thin knife, run the tip around the edge of the cookie, loosening it from the tin. Remove to paper towel and let cool completely.

Coffeehouse Shortbreads at Home

Have you ever gone to a coffee shop and had the most amazing Coffeehouse Shortbreads cookies and wanted to make them at home?  I’ve had that experience too!  I love to come home and make things from scratch that mirror something I’ve had out, so these cookies were a must.  Tender shortbreads are something I’ve always loved out, but there had to be a good way to make them at home.

Start with Quality Coffee for Coffeehouse Shortbreads

You read that right!  These Coffeehouse Shortbreads have coffee in them!  I started with quality ground coffee, from a local coffee house that I frequent.  They grind it really fine for me, so it goes really nicely in the cookies.  Eat coffee grounds?  Yes!  I fell in love with chocolate covered espresso beans years ago, and adding a bit of finely ground coffee to a phenomenal Coffeehouse Shortbreads cookie was a no-brainer.  It adds a richness and depth that the plain cookie itself lacks.  Try a non-flavored, quality coffee, such as a Kona or Kona blend, in this wonderfully complex cookie and save the flavored coffees for your cup.

  • 1/4 t cinnamon

  1. Heat oven to 275 degrees F.
  2. Cream the sugar, salt, extract, and butter until smooth and soft.
  3. In a separate bowl, mix the flour, coffee, and cinnamon.
  4. Add the flour mixture to the butter mixture, mixing completely.
  5. Scoop a heaping tablespoon of dough and roll into a ball. Flatten slightly and place on an ungreased cookie sheet. These cookies will not spread far, so you can fill the tray nearly completely.
  6. Bake 15 minutes. Turn each cookie over, then bake another 15 minutes. Place on paper toweling to cool.
  7. Enjoy with your favorite cup of coffee.

I’m always excited when I see a new local coffee shop or roaster pop up in town.  They are usually sources of great things, and nothing seems better than freshly roasted coffee, perfectly heated and ground, ready for my coffee pot.  And now, that same coffee is amazing in these Coffeehouse Shortbreads.  The fresher the roast, the more flavor you get both in your cup and on your plate.  Check around you for homegrown coffeehouses and roasters.  They might surprise you with their variety and prices!
