These Crock Pot Chicken Tacos are one of my favorite recipes! I am amazed at how simple these are yet they taste fabulous. If you’re looking for a simple yet oh so yummy meal then this is definitely the one for you!

Crock-Pot Chicken Tacos Recipe

Ingredients

  • 1 package of Corn tortillas - we are going to cook these, they turn out so much better this way!
  • 1 package of 1 oz Taco Seasoning packet
  • 1 package of 1 oz Ranch seasoning packet
  • 6 chicken breasts
  • 1 can of Chicken broth
  • 1 can of Chicken or Turkey Gravy
  • 1/2 can water (when I say can I am talking about the gravy can, fill it halfway with water)
  • Vegetable oil to cook tacos
  • Sour cream and cheese (optional - for tacos)
  • Any toppings you want in your tacos (lettuce, tomato) We like them plain jane around here!

Instructions

  1. Add Taco seasoning, Ranch seasoning, chicken broth, water and gravy to crock pot and whisk together
  2. Place chicken in crock pot
  3. Cook on medium-high for 3 hours
  4. Shred Chicken with forks and place shredded chicken back in the crock-pot
  5. Let the chicken soak up the yummy juice in crock-pot for about 45 minutes.
  6. Cooking the Taco shells:
  7. Fill a shallow pan with Vegetable oil and let heat up
  8. Place corn tortillas in the pan and as soon as they start bubbling up, fold in half with tongs
  9. Cook for about 30 - 40 seconds until crispy (not too crispy) and lay on a plate with napkins to absorb oil
  10. You can add sour cream, cheese, lettuce, tomatoes, ranch and more to your tacos...I personally like them with sour cream and hubby liked them with BBQ sauce!

I was hankerin’ for some Southwest Crock-Pot Tacos, but I didn’t want the same old dry seasoning packets that I normally use.  Something fresh and tasty was in order.  So, I went off to the store in search of something new.  Boy, did I find it!  Frontera New Mexico Taco Skillet Sauce!  I was looking for beef tacos, but the sound of the chicken seasoning with roasted tomatoes and mild red chile was too good to pass up.  Why did it have to be just for chicken?  I’m not one to think inside the box, so two pouches of this interesting sauce made it home with me for Southwest Crock-Pot Tacos.

Double Cooking Makes Southwest Crock-Pot Tacos Flavorful

I had half a beef tip roast in the freezer that was a perfect fit in my smaller Crock-Pot.  I was sure that paired with the sauce, it would be an amazing dinner.  I let it cook all day, shredded the beef, then let it simmer again in the juices for about an hour.  Southwest Crock-Pot Tacos is the best taco dinner I’ve ever had!   The sauce was mild, with a faint bit of heat at the back of your tongue.  I now have a new favorite taco seasoning!

Top this meat with your favorite taco fixings for an awesome dinner.  Many of the fixings you can get at the store pre-chopped, for a super-easy dinner in a jiffy.  Check the produce section of your favorite grocery store for chopped tomatoes, onions, pico de gallo, and even lettuce.  Take advantage of the convenience items to make your dinner faster to spend more time with your family.

Ingredients

  • 2 lb beef roast
  • 2 pkgs Frontera New Mexico Taco Skillet Sauce, any flavor
  • Taco shells, hard or soft
  • your favorite taco toppings

Instructions

  1. Place the beef roast in the Crock-Pot and pour the sauce over the top. Cover and cook on low, 6-8 hours, until the roast is tender.
  2. Lift the roast out and let cool 5 minutes. With two forks, shred the beef with the grain, removing any fat. Return the lean meat back to the Crock-Pot and let simmer on low another 30 minutes to an hour.
  3. Assemble your tacos as you like. Enjoy!
