Asian Cucumber Salad takes advantage of one of the few quality vegetables that is available year-round.  I especially love hot-house English cucumbers when they are on sale.  You can eat them skin and all, as they are wrapped in plastic, and are often organic.  Just give them a good scrub and you are ready to go!

The easiest way to slice this tasty veggie is with a mandolin.  No, not the kind you play, but one like this:

This little dandy is an amazing tool for the kitchen.  It slices just about any firm veggie quickly and evenly.  From Asian Cucumber Salad to potatoes for just about anything, everything comes out perfect.  Dishes like scalloped potatoes or homemade potato chips have half the prep time!  Anything that makes my job faster in the kitchen is a must-have for me!  This particular one has been in my family for a long time, but new ones have different blades and such for cutting to make waffle fries, crinkle cuts, and more.

Asian Cucumber Salad is great in the winter when you want a hint of summer to brighten your day, or in the middle of summer with a grilled meal.  On really hot days, my family will eat Asian Cucumber Salad as a snack at dinner time and wait until later for a more substantial meal, after the day cools.  Asian Cucumber Salad is also amazing on diets.  You can replace the sugar with stevia and this makes a great low-calorie snack or salad.
