Spring Nest Cupcakes ~ Bring the Spring to Your Dessert

Spring seems to be taking it’s sweet time in getting to us this year, but you can bring it to your dessert for Easter with Spring Nest Cupcakes.  These sweet little treats will have your kids oooh’ing and aaaah’ing over your cupcake talents, while it will put a smile on all the adult faces too.  Spring Nest Cupcakes are easy to make, and make a beautiful centerpiece to an Easter dinner.

Wilton, as well as other companies, are putting out pretty paper liners that look like flowers, or have designs on them.  I chose some sunny looking liners for my Spring Nest Cupcakes.  They make them bright and beautiful, perfect to lift your spirits even on a cloudy day!

Spring Nest Cupcakes ~ A Beautiful Addition to Your Easter Table

Ingredients

  • 1 box cake mix, any flavor, and ingredients to make, per box
  • cupcake papers
  • decorator frosting
  • green frosting tint
  • jelly beans
  • #230 decorator tip
  • decorator bag

Instructions

  1. Make the cake mix up, per the instructions on the box, and make cupcakes from it.
  2. Place the decorator frosting in a bowl. Mix enough frosting tint into it to make a grass green color.
  3. Place the decorator tip in the bag and fill with the frosting.
  4. Starting at the outer edge of cooled cupcakes, make dollops on the cupcake, so they look like grass. Continue until the top is covered completely.
  5. Place a few jelly beans in the center of the cupcake to look like eggs.
  6. Repeat until all of the cupcakes are decorated.
  7. Enjoy!

Too Many Spring Nest Cupcakes?  Freeze Them!

I often find that a cake mix makes too many cupcakes for my family to eat before they go stale.  Before you frost them, put them in a large plastic zippy bag or container.  They freeze well, and once they are thawed, are just as easy to frost for decorated desserts.  I keep a few extras in the freezer for whenever I need some quickly for bake sales.  Spring Nest Cupcakes sell pretty darn fast too!
