Copycat Red Lobster Lava Cake

Any recipe that starts out with chocolate, butter, and sugar has GOT to be good!  And this recipe is better than good.  It’s amazing!  I’ve ordered lava cake at many restaurants, but Red Lobster has to be the best.  Unfortunately, the one near me stopped serving it, despite my protests, so I figured out how to make Copycat Red Lobster Lava Cake at home.  Remarkably, it’s pretty easy and it makes not just one Copycat Red Lobster Lava Cake, but six!  Now I can have them ready in the fridge for whenever I need my chocolate fix!

How Does the Center of a Copycat Red Lobster Lava Cake Stay Liquid

That was a question I always asked myself when I was ordering these wonderful little treats.  The trick is freezing Copycat Red Lobster Lava Cake in an oven proof, single serve dish.  You bake them frozen, and not completely, so the center is hot but gooey and delicious, the trademark of a Copycat Red Lobster Lava Cake.  But shhhh!  Don’t tell everyone the secret!  Let them wonder how you did it!

Ingredients

  • 6 oz chocolate chips
  • 10 T butter, cut into pats
  • ½ C sugar
  • ½ C flour
  • 3 T cocoa powder
  • ¾ t baking powder
  • 3 eggs

Instructions

  1. Spray 6 custard cups with cooking spray; set aside.
  2. In a small saucepan, melt the chocolate chips over medium-low heat until smooth.
  3. Add the butter, a little at a time, and stir until incorporated.
  4. Add the sugar and stir. Heat until smooth and melted.
  5. Pour the chocolate mixture into a large bowl and set aside.
  6. In a small bowl, mix the flour, cocoa powder, and baking powder.
  7. With a hand mixer, mix the flour mixture into the chocolate mixture.
  8. Add the eggs, one at a time and mix well.
  9. With the mixer on the medium setting, mix for 6 minutes.
  10. Pour the cake batter into the prepared custard cups evenly. Cover with plastic wrap and freeze at least overnight.
  11. Heat oven to 375 degrees F.
  12. Remove plastic wrap and bake cakes 15 to 18 minutes, until the edges are firm and the center is moist.
  13. Remove from oven and cool for 5 minutes.
  14. Invert on a serving plate and serve warm.

Seriously, why would you give delicious Copycat Red Lobster Lava Cake to company?  Oh…wait.  Yeah, I probably shouldn’t hog these all to myself, but they are so good!  If you need to, you can multiply this recipe and make a big batch for a gathering.   You might have to let Copycat Red Lobster Lava Cake cook another minute or three, with more than 6 in the oven.

Ingredients:

Are you not a fan of berries?  Have no fear!  There are other flavors you could add to Fizzy Berry Burst Milkshakes instead of berries!  Chocolate syrup, mixed with the ice cream then combined with gingerale makes a fantastic Fizzy Berry Burst Milkshakes, sans berries!  Gingerale goes with so many different flavors.  Try using a vanilla bean ice cream, add a little of the gingerale to the blender, then pour more gingerale over it in your glass for a great cream soda.  Don’t let a dislike for berries or maybe even an allergy to them prevent you from Fizzy Berry Burst Milkshakes!

I love to surprise my family with something that they love, served in a different way, especially when it’s creative.  When peaches are fresh and blueberries are freshly frozen, they love homemade Peach Blueberry Pie.  It’s been a family favorite for four generations.  Placing this fabulous combination in 4 ounce Ball canning jars makes it adorable, plus, you can put the lid on and give it as gifts!  Everyone smiles when a Peach Blueberry Pie in a Jar is served.

Peach Blueberry Pie in a Jar is a perfect dish for a scoop of vanilla ice cream on top.  The creaminess will melt into the Peach Blueberry Pie in a Jar a little, giving it a delicious vanilla kick.  I love to add some ice cream and watch the smiles on my family’s faces!

Blueberry Bread Pudding Makes the Perfect Dessert

Bread pudding is one of those treats often seen when dining out, but you hardly ever hear of anyone making it at home.  It was not a treat made at my home when I was growing up, but after making it once, it became a big hit.  One of the great things about bread pudding is the ability to add seasonal fruit, beyond the traditional raisins.  I love making Blueberry Bread Pudding, and my family loves when I make it.  It’s simple, takes just a few minutes to put together, and when you serve it, it’s elegant and perfect for company.

The Bread Makes a Difference in Blueberry Bread Pudding

The bread really does make a difference in Blueberry Bread Pudding.  Dense breads, such as a boule or Italian make good Blueberry Bread Pudding.  I checked out the breadmaker at a local farmer’s market and found a wonderful brown bread for this recipe.  It adds another level of flavor to the Blueberry Bread Pudding.  Choose a bread that is rich and dense for the best Blueberry Bread Pudding.  Also, cutting the bread and leaving it out overnight to get stale, or toasting it in the oven for a few minutes before mixing it with the wet ingredients makes for a much better, less soggy Blueberry Bread Pudding.

Ingredients

  • ¼ C (1/2 stick) butter, softened
  • ½ C brown sugar

  • ½ C (1 stick) butter
  • 1 egg, beaten
  • ½ t cinnamon
  • ¼ t nutmeg
  • 2 t vanilla extract
  • ¼ C spiced rum

Instructions

  1. Heat oven to 350 degrees F.
  2. In a large, ovenproof bowl, whisk the eggs, 2 cups sugar, milk, and vanilla until completely incorporated.
  3. Cut the bread into 1/2 inch cubes.
  4. Gently stir the bread into the egg mixture and let soak 10 minutes.
  5. Stir in the blueberries.
  6. In a small bowl, mix ¼ c butter, ½ C brown sugar, and ½ t cinnamon. Sprinkle over bread mixture.
  7. Bake, uncovered, for 35-40 minutes, until mixture is set.
  8. In a sauce pan, mix the 1 C sugar, stick of butter, 1 beaten egg, cinnamon, nutmeg, and vanilla. Cook over medium heat until sugar is melted, stirring occasionally.
  9. Add in brandy, stirring until completely incorporated.
  10. Pour over warm bread pudding.
  11. Serve hot or cold.

Blueberry Bread Pudding is so versatile!  Try peeling and cutting peaches into a small dice, or ripe, juicy apples!  Try strawberry and rhubarb, or bananas for a bananas foster type dessert.  The possibilities are endless with Blueberry Bread Pudding.

Yep, you read that right.  Salty, sweet, gooey, chocolate.  Everything you need for an awesome day!  The best part is everything is from the store, from the brownie mix to the caramel sauce.  With a little planning, you can get it all on sale for little or nothing too!  These will be a hit at an office carry-in or picnic as every chocolate lover will be enthralled with the sweet salty goodness.

Making Salted Caramel Pretzel Brownies Special

  • 1 box “family size” brownie mix + ingredients to make it
  • 1 bag mini twist pretzels
  • 1 16 oz jar caramel sauce (not the squeeze variety)
  • 1 T pretzel or coarse sea salt

Instructions

  1. Heat oven according to brownie package directions.
  2. Spray a 13x9 pan with cooking spray.
  3. Mix the brownie mix according to the package directions and pour into the prepared pan.
  4. Press pretzels into the brownie mix so that the entire bottom of the pan is covered, like this:

If you chill your Salted Caramel Pretzel Brownies, it will help your caramel sauce set up and make for prettier squares when you cut them.  The opposite is also true if you like a more liquid caramel.  Let the Salted Caramel Pretzel Brownies sit out in a warm room and the caramel will get soft and runny, giving your squares a draped look.  Either way, Salted Caramel Pretzel Brownies are an amazing end to a meal!

 

1 box “family size” brownie mix + ingredients to make it

1 bag mini twist pretzels

1  16 oz jar caramel sauce (not the squeeze variety)

1 T pretzel or coarse sea salt

 

Heat oven according to brownie package directions.

Spray a 13×9 pan with cooking spray.

Mix the brownie mix according to the package directions and pour into the prepared pan.

Press pretzels into the brownie mix so that the entire bottom of the pan is covered, like this:

Bake according to the package directions.

Let the pan cool for about 10 minutes.

Pour the caramel sauce over the top, spreading in a thick layer.  If the caramel is stiff, microwave in 1 minute increments until it’s pourable.

Sprinkle with salt and let cool completely.

Cut into squares and serve.
