Stuffed French Toast: The Letdown and The Recovery

I went with some friends to a restaurant for breakfast yesterday, and one of the ladies ordered Stuffed French Toast. Well, it wasn’t nearly as good as she wanted it to be, as the cook didn’t sweeten or flavor the cream cheese, he just spread it on the French toast and topped it with another slice. It was a complete letdown from what the description was. So, I thought about it, and came up with a plan: Stuffed French Toast at home, easily, and the tastiest you’ve ever had. I called her up this morning and told her to come over for coffee, but I surprised her with a plate of the most delectable Stuffed French Toast.

How Easy Can Stuffed French Toast Really Be?

Super duper easy! If you have ever made French Toast, this is just as easy. Whipping cream cheese, sugar, vanilla, and a hint of cinnamon makes a great filling that is good not only for Stuffed French Toast, but also for pancakes, or dipping apple slices in.

The Perfect Brunch: Stuffed French Toast

Ingredients

French Toast
6 slices Texas toast
5 eggs
1/4 C half n half
1 t vanilla extract
1/4 t cinnamon
Filling
1 8oz block cream cheese, softened
1 1/2 C powdered sugar
1/2 t vanilla extract
1/2 t cinnamon

Instructions

In a bowl, beat the cream cheese until fluffy. Add in the vanilla and cinnamon, blending until incorporated.
Add in the powdered sugar, a little at a time, and mix well. Set aside.
In a shallow bowl, whisk the eggs, half n half, vanilla, and cinnamon.
Heat a saute pan over medium high heat. Spray with cooking spray.
Dip a slice of bread in the egg mixture. Flip over to coat the other side. Place in the saute pan. Repeat until the pan is comfortably full.
Brown on one side, for 3-4 minutes, then flip. When both sides are brown, remove from the pan.
Place one slice on a plate. Top with a large spoonful of the sweetened cream cheese. Add another slice on top.
Serve warm, with fruit if desired.

Sunday Brunch is Better with Stuffed French Toast

With the help of a griddle, making platefuls of Stuffed French Toast is an easy and delicious start to a beautiful Sunday brunch.

French Toast

6 slices Texas toast

5 eggs

1/4 C half n half

1 t vanilla extract

1/4 t cinnamon

Filling

1 8oz block cream cheese, softened

1 1/2 C powdered sugar

1/2 t cinnamon

In a bowl, beat the cream cheese until fluffy. Add in the vanilla and cinnamon, blending until incorporated.

If you’ve ever been to a Renaissance Faire, you’ve seen or eaten a staple treat: Scotch Eggs. These delectable finger foods are too tasty to wait for the Faire for though. Savory sausage is wrapped around a delicate hard cooked egg, then breaded and deep fried to golden goodness. They are a high protein addition to a simple meal of salad and bread.

The Sausage Makes Scotch Eggs Fabulous

As in any recipe, the ingredients individually should be something you would love to eat. If you purchase a sausage brand that you don’t like, you aren’t going to like the Scotch Eggs. Get something that you like to eat for breakfast, or put in your pasta sauce. If you like it on its own, you are going to love it wrapped around an egg and deep fried. Personally, I love to mix an Italian and a spicy sausage to give my Scotch Eggs a little bit of bite.

Hard Cooking Eggs for Scotch Eggs

I’m all for work smarter, not harder, and I hate hard boiling eggs. It takes so much time, and they are so touchy. I’ve found they turn out perfect every time if you bake them. Yes, you read that right! Place cold eggs in a cold oven, directly on the rack. Put a cookie sheet underneath, and turn the oven to 325 degrees F. Start the timer for 30 minutes when you turn the oven on. When it is done, put the eggs in cold water for 5 minutes and you will have perfect eggs that are easy to peel once they are completely cold.

Amazing Scotch Eggs Recipe ~ Don’t Wait for a Renaissance Faire!

Ingredients

9 hard cooked eggs, peeled and rinsed
1/2 C flour
2 eggs, whisked
1 t dried parsley
2 lbs sausage, casings removed if necessary
1 1/2 C breadcrumbs
oil for frying

Instructions

Mix the whisked eggs and parsley in a shallow bowl. Set aside.
Place the flour and breadcrumbs in separate shallow bowls.
Roll each egg in flour, dusting them lightly.
Roll in the egg/parsley mixture to coat completely.
Flatten some of the sausage into a small disk. Wrap around the egg and seal completely. The sausage should be about 1/2 inch thick.
Roll in the breadcrumbs to form a crispy coating around the sausage.

Heat the oil to about 350 degrees F in a deep pan. Place eggs in the oil gently and cook until they are crispy, golden brown, and done throughout.
Drain on a plate with paper toweling.

Make up these wonderful Scotch Eggs, and stack them on a plate, ready to go into the hot oil. People will love the fresh take on fondue parties.

Easy Creamy Hollandaise is Hard to Make!

I grew up with a grandfather that was a gourmet cook. He made just about everything. But very rarely did he attempt Hollandaise Sauce. I always thought it was well beyond my basic abilities. Until I tried it. Now, I’m hooked. The basic skill is simple: constantly whisking. Even my kids can do that! Don’t shy away from this Easy Creamy Hollandaise Sauce recipe. The results are amazing and creamy, and sure to become a favorite sauce.

What is Hollandaise Sauce Anyways?

Hollandaise Sauce is the delicious combination of fresh egg yolks, butter, and lemon juice. Because egg yolks can be touchy, to keep them from curdling, heating them gently is a must. I used a glass Pyrex bowl over a pot of simmering water. A boil is too hot, but simmering is perfect for Hollandaise Sauce.

Once you have your Easy Creamy Hollandaise Sauce made, it’s a perfect addition to compliment vegetables, or in Eggs Benedict, the wonderful combination of a poached egg and Canadian bacon over a lightly toasted English muffin.

Easy Creamy Hollandaise Sauce ~ A Perfect Addition to Your Easter Dinner

Ingredients

4 egg yolks
3 T lemon juice, freshly squeezed
1 T water
1/8 t Worcestershire sauce
1 C butter, melted

Instructions

In a heatproof glass bowl, whisk the yolks, lemon juice, water, and Worcestershire sauce.
Place the bowl over a simmering pot of water, constantly whisking.
Add the melted butter, 2 tablespoons at a time, continuing to whisk.

A Rustic Ham Frittata Makes a Delicious Breakfast

With a bit of leftover ham, you can make a fantastic, savory breakfast in a pretty short amount of time. Pair this with a beautiful assortment of fruit and toast, and you have a healthy, well rounded meal that will last you through the morning. If you don’t have any ham leftover from a previous meal for a Rustic Ham Frittata, grab some ham at the deli, or even in the hot dog case of the grocery store. You can often find diced ham or ham steaks ready for your cooking.

Rustic Ham Frittata Reheats Well

If you are only feeding one or two for breakfast, you have a couple of choices. Make a smaller Rustic Ham Frittata, if you have a small nonstick pan, or you can make a regular one and have some of the best breakfast leftovers you could imagine. Simply place in foil and heat in a 350 degree F oven for about 10 minutes, or place on a microwave safe plate and microwave for 1-2 minutes.

Rustic Ham Frittata Recipe ~ Great Way to Start Your Day!

Ingredients

4 oz baby bella mushrooms, cleaned and sliced
1 medium onion, diced
2 T butter, divided
1 sm can chopped black olives
1 C ham, diced
10 eggs
1/4 C half n half or milk
salt
pepper
1 C cheddar, shredded

Instructions

Heat a nonstick saute pan over medium heat.
Add 1 tablespoon of butter. When melted, add the mushrooms and onions. Saute until the mushrooms start to brown and the onions are clear.

Add the ham and olives, turning to brown and heat them.

Whisk the eggs in a bowl. Add the half n half or milk, salt and pepper. Whisk to completely incorporate.
Add the remaining tablespoon of butter to the pan. When melted, pour in the egg mixture. Turn the heat down to medium low and cover the pan. Let cook for about 4 minutes, or until the top of the frittata is dry.
Cover with cheddar, and place lid back on the pan. When the cheddar is melted, remove from the heat and serve with toast and fruit.

Don’t limit yourself to just ham and cheddar. Just about any meltable cheese and tasty meat works well in a frittata. Leftover roasted vegetables work well too. Use what’s available and adapt this to your tastes.

Quiche is elegant, delicious, and simply made. I remember it being for special occasions because of the work involved. Have no fear! This recipe is so easy, you’ll be making it on weekends or for a fast breakfast (it heats easily in the microwave). You can even make it the day ahead for a birthday breakfast, or bunch!

I love making this with turkey sausage, although you can mix up any of the filling ingredients. Just pour the same egg mixture over them and you are all set!

Simply Delicious Quiche Recipe

Ingredients

1 9" pie crust (either homemade or store purchased)
1 lb sausage
6 oz mushrooms
1 C cheddar cheese
4 eggs
2 C half n half
1/2 t onion salt
1/4 t pepper

Instructions

Preheat oven to 425 degrees F.
Prepare the pie crust in a 9" pie pan.
Brown the sausage and mushrooms. Layer in the pie crust.
Top with the cheese.
In a bowl, whisk the eggs, half n half, salt and pepper. Pour over the meat mixture.
Bake for 15 minutes in 425 degree F oven. Reduce heat to 300 degrees F and bake another 30 minutes, until a knife inserted in the center comes out clean.
Serve with fruit , if desired.
