Feta and Onion Salad?  Are You Kidding Me?

That’s right!  Feta and Onion Salad.  When someone presented it to me for dinner one night, I thought they were crazy.  Raw onions, in a salad, with some cheese sprinkled in?  That sounded really weird, and not very tasty at all.  Being inquisitive, however, I tasted what my mom always called a “Thank You Bite” so I wouldn’t hurt my friend’s feelings.  Then, I piled my plate with it!  The sweetest onions I’ve ever tasted, paired with a brined, salty cheese that brought out the sweetness even more.  My tastebuds were at odds with my brain, trying to figure out how Feta and Onion Salad could be quite that tasty!

Perfect Onion Varieties for Feta and Onion Salad

The original choice for this deliciously cool salad was Vidalia onions.  If you’ve never had these beauties, they are sweet, crisp, and perfect.  They are grown in certain areas of Georgia, and are even the state vegetable!  Another variety that is great for this salad is a Texas Sweet.  They have a sugary taste that compliments the saltiness of the cheese perfectly.  The last variety is aptly named Candy.  These onions are as sweet and tasty as the other two, and work well in Feta and Onion Salad.  Your pick depends on your personal choice and what’s available in your area.

Feta and Onion Salad Recipe ~ A Perfect Picnic Salad

Ingredients

  • 2-3 Vidalia (or sweet) onions, sliced very thin
  • 4 oz feta cheese
  • 1/4 C chopped parsley
  • 1 green pepper, sliced very thin
  • ¼ C olive oil
  • 2 T. white wine vinegar
  • 2 T. lemon juice
  • ½ t. dry oregano
  • salt & pepper to taste

Instructions

  1. Mix all ingredients in a large bowl.
  2. Chill to marinate for at least 4 hours.
  3. Serve with your favorite meal.

Slicing Things Thin for Feta and Onion Salad

The easiest way to slice things super thin for this crispy salad is with a mandolin.  If you’ve never used one, it’s one of the most indispensible things in my kitchen.  It slices things thin to thick, depending on what setting you have it on, and makes short work of it.  It’s perfect to use for the Feta and Onion Salad.  When I first recommended it to a friend that makes this salad, she told me she doesn’t like gadgets and slicing the onions thin doesn’t take THAT long.  So I brought mine over and showed her. She bought one the next day.  Not only is it great for Feta and Onion salad, but for pickles, salads, and anything you want sliced perfectly!  (Seriously…head out to your favorite cooking shop and find one!)

Feta and Onion Salad Mandolin

 

2-3 Vidalia (or sweet) onions, sliced very thin

4 oz feta cheese

1/4 C chopped parsley

1 green pepper, sliced very thin

¼ C olive oil

2 T. white wine vinegar

2 T. lemon juice

½ t. dry oregano

salt & pepper to taste

 

Mix all ingredients in a large bowl.

Chill to marinate for at least 4 hours.

Fresh Tomato Avocado Salad ~ A Herald of Spring!

It’s the beginning of avocado season again and it’s the perfect time to add them to salads, such as Fresh Tomato Avocado Salad.  It’s a salad I’ve been making for years to celebrate the coming of spring and the promise of summer, plus, it’s a great way to get healthy fats into your diet, and still enjoy the amazing flavors of the season.

An Unusual Flavor in Fresh Tomato Avocado Salad

I was introduced to capers a few years ago in a chicken dish.  The little buds are the product of the Flinders Rose, and are the flower buds that have not bloomed.  They are harvested and pickled in a salty brine and are a great Mediterranean touch to salads and meals.  To the Fresh Tomato Avocado Salad, they add a bite that compliments the creamy mellowness of the avocado and the bright sweetness of the tomato.

Ingredients

  • 3 ripe avocados, skins removed, pitted, and flesh cubed
  • 1 C tomatoes, cut bite sized
  • 4 oz feta cheese, crumbled
  • 3 T capers, drained
  • 4 T olive oil
  • 3 T red wine vinegar
  • ground black pepper

Instructions

  1. Place the avocados, tomatoes, feta, and capers in a bowl and gently toss.
  2. Add the olive oil and wine vinegar. Season with black pepper.
  3. Chill and serve.

Fresh Tomato Avocado Salad is a Great Way to Introduce Avocados

If you’ve never eaten an avocado before, it can be a little daunting.  When choosing your avocados, look for ones with dark skin that yield to the touch but are not squishy.  If the grocery only has unripe, hard ones, bring them home a few days before you want to serve the salad and place them in a brown paper lunch sack.  They will ripen in a day or two and be perfect for your Fresh Tomato Avocado Salad.  It’s a great way to introduce avocados into your diet and pair them with other textures if you’re not used to the creamy goodness that avocados bring.

 

3 ripe avocados, skins removed, pitted, and flesh cubed

1 C tomatoes, cut bite sized

4 oz feta cheese, crumbled

3 T capers, drained

4 T olive oil

3 T red wine vinegar
