The Birth of Blueberry Glazed French Toast

French toast has many incarnations in my house.  Every season seems to bring a new flavor or style to the breakfast table, and when I found blueberry swirl bread, I was set for a blueberry incarnation of French toast.  Blueberry Glazed French Toast was born in my kitchen.  And it was amazing!  So much so, that I have been asked for an encore!

In my area, Aunt Millie’s makes a delicious blueberry swirl bread in the spring.  Being the blueberry lover that I am, I picked some up for toast, thinking my kids would love it.  It ended up that my kids looked at the blueberries I had brought home from a local farmer’s market and asked me if I could make them into syrup and the bread into French toast.  The bread was great on its own, but the fresh picked blueberries, bursting with flavor and sweet juiciness, really made the Blueberry Glazed French Toast.  Choose berries that are plump and dark blue, with a smooth skin.  You’ll have a bright flavor that will compliment  not only blueberry swirl bread, but any bread that you want to make French toast from.  The more flavor in your blueberries, the more flavor in your final dish.  To really bring out the flavor of the berries, here’s a secret:  cinnamon and lemon peel.  Not things you would expect, but the lemon really brightens the blueberries, and the cinnamon brings out just a bit of the earthiness, making people wonder what you did to make the sauce taste so good!  I add both of those to my fresh blueberry pie too!

Blueberry Glazed French Toast Recipe ~ Wake Up to Berries!

Ingredients

  • 1 pint blueberries
  • 1/2 C water
  • 1/2 t lemon zest, finely diced
  • 1 T flour
  • 1/2 t ground cinnamon
  • 1 loaf blueberry swirl bread (or other favorite bread)
  • 3 eggs
  • 2 T milk or half n half
  • Pam cooking spray

Instructions

  1. Rinse the blueberries in cold water and place in a small saucepan. Add the water and lemon zest. Warm to a simmer.
  2. Add the flour and stir to remove any lumps. Allow the mixture to thicken. Add the cinnamon and remove from the heat.
  3. While the blueberries are simmering, heat a griddle or pan to medium high heat.
  4. Whisk the eggs and milk together in a shallow bowl.
  5. Dip bread in mixture, turning to coat.
  6. Spray griddle with Pam. Place the wet bread on the griddle and cook until brown. Turn and brown the other side.
  7. To serve, place slices of French toast on a plate. Ladle some blueberry sauce over the top and serve hot.

Blueberry Glazed French Toast: A Fresh Take on a Classic Favorite

French toast is a favorite that many people make and the recipe is almost always the same: eggs, milk, bread.  It’s nice to change it up a bit and make something just a little bit different, like Blueberry Glazed French Toast.  A fresh flavor with berries that are in season is a wonderful surprise at breakfast and is a great way to start your day.

 

1 pint blueberries

1/2 C water

1/2 t lemon zest, finely diced

1 T flour

1/2 t ground cinnamon

1 loaf blueberry swirl bread (or other favorite bread)

3 eggs

2 T milk or half n half

Pam cooking spray

Stuffed French Toast: The Letdown and The Recovery

I went with some friends to a restaurant for breakfast yesterday, and one of the ladies ordered Stuffed French Toast.  Well, it wasn’t nearly as good as she wanted it to be, as the cook didn’t sweeten or flavor the cream cheese, he just spread it on the French toast and topped it with another slice.  It was a complete letdown from what the description was.  So, I thought about it, and came up with a plan: Stuffed French Toast at home, easily, and the tastiest you’ve ever had.  I called her up this morning and told her to come over for coffee, but I surprised her with a plate of the most delectable Stuffed French Toast.

How Easy Can Stuffed French Toast Really Be?

Super duper easy!  If you have ever made French Toast, this is just as easy.  Whipping cream cheese, sugar, vanilla, and a hint of cinnamon makes a great filling that is good not only for Stuffed French Toast, but also for pancakes, or dipping apple slices in.

Ingredients

  • French Toast
  • 6 slices Texas toast
  • 5 eggs
  • 1/4 C half n half

With the help of a griddle, making platefuls of Stuffed French Toast is an easy and delicious start to a beautiful Sunday brunch.

 

French Toast

6 slices Texas toast

5 eggs

1/4 C half n half

1 t vanilla extract

1/4 t cinnamon

 

Filling

1 8oz block cream cheese, softened

1 1/2 C powdered sugar

1/2 t vanilla extract

1/2 t cinnamon

 

In a bowl, beat the cream cheese until fluffy.  Add in the vanilla and cinnamon, blending until incorporated.

Add in the powdered sugar, a little at a time, and mix well.  Set aside.

When I was little, I used to call Banana Bread, Nana Bread, because my Nana (grandmother) was the only one in the family that made it, but she made a lot of it.  Later on, I realized that it was truly banana bread, but I still call it Nana bread and think of her when I make it.  It’s a simple little sweet bread, complete with a fantastic texture and an even better flavor.

Banana Bread from Single Leftover Bananas

I always seem to have one or two bananas left over in a bunch by the time my family tires of eating them for the week.  Instead of wasting them, I freeze them for later batches of Banana Bread.  The skins turn black and sometimes wrinkle, but I assure you that they are just fine for baking!  Simply thaw them, cut off the end of the stem, and squeeze into the flour like a tube of toothpaste.  The banana pulp will slide right out and you’ll be ready to mix incorporate them.

Making Banana Bread Fluffy

Quite by accident, I was making banana bread one day and had mixed the bananas into the flour mixture, and realized that I had no eggs.  I had already mixed the flour into the bananas, and I didn’t want to waste them.  So, I let it sit while I waited to get the eggs.  The banana-flour mixture started to rise like yeast from the baking powder and soda.  I made up the banana bread anyway and the result was amazing.  The resulting bread was fluffy and light.

Ingredients

  • 1 ¾ C Flour
  • 2 t baking powder
  • ¼ t baking soda
  • ½ t salt
  • 1/3 C shortening
  • 2/3 C sugar
  • 2 eggs, well beaten
  • 1 C mashed ripe bananas (2-3 bananas)

Instructions

  1. Mix flour, powder, soda and salt. Add bananas and mix well. Set aside.
  2. With electric mixer, beat shortening in bowl until creamy. Add sugar gradually to shortening and beat until light and fluffy. Add eggs and beat well.
  3. Add the banana mixture to the shortening mixture and beat well. Add the rest of the banana mixture, beating until incorporated and smooth.
  4. Grease and flour pan. Bake at 350?F, 40-45 minutes.
  5. Makes 1 loaf

Banana Bread Freezes Well

I usually make up several loaves of banana bread at once, cool them, and freeze all but one.  They freeze marvelously.  When you’d like to serve one, thaw it and put it, unwrapped, in a 300 degree F oven for about 5 minutes to crisp up the crust.  It will be just like you baked it.

 

1 ¾ C Flour

2 t baking powder

¼ t baking soda

½ t salt

I grew up in a house that LOVED egg nog.  As a kid, I had the opportunity to try it from the “kiddie bowl” and I could not understand why anyone would like to drink something like that.  As an adult, my opinion hasn’t changed.  As a drink, it’s not my thing, however, as a recipe ingredient, it’s AMAZING!  So, during this wonderful season, I want to share it with you all.  It’s simple, festive, and certainly tasty!

Ingredients

  • 3 C egg nog
  • 1/2 t cinnamon
  • 12 slices firm, dense bread
  • Nonstick spray

Instructions

  1. Heat your griddle to 350 degrees.
  2. In a shallow bowl, mix the egg nog and cinnamon.
  3. Spray the griddle with the nonstick spray. Dip bread, a slice at a time, in the egg nog mixture and place on the griddle.
  4. Cook until golden brown and flip over, cooking the other side to golden brown as well.
  5. Serve with butter, syrup, or fruit compote.
