I love a simple salad in the summer, something I can make quickly, but that is still delicious and healthy. There is a restaurant that I love to frequent that has such a salad, and it was time to bring it home to my kitchen. Their Italian Salad Dressing, the house specialty, is what makes this salad one of the very best I’ve ever had. Fantastic greens blanket whatever other veggies you love. For me, it’s fresh tomatoes and cucumbers. Especially when they are out of my garden! Whatever your favorite salad, this dressing is amazing on it. Now that I have a bottle of dressing in the fridge, I need to make a Cobb salad to put it on!
Lots of people have their own recipes for Italian Salad Dressing. My family has one too. What is common in most of them is olive oil and vinegar. Quality counts in this recipe, and since you aren’t cooking the oil, a quality extra virgin olive oil is perfect for this Italian Salad Dressing. I love red wine vinegar in most of my Italian Salad Dressing recipes, but for this particular one, apple cider vinegar works amazingly well. The flavor in the vinegar adds a lot of depth and a bit of sweetness to this Italian Salad Dressing. The other thing that makes this a stand out when it comes to Italian Salad Dressing is anchovy paste. The original recipe called for filets, but I find the paste works great because with a few shakes, it melts right into the dressing. It doesn’t give a harsh fishy taste either, as you might expect. It’s just another layer of flavor in a delicious Italian Salad Dressing.

I love making Italian Salad Dressing in a jar that I’ve kept out of the recycle bin, or even canning jars. As long as it has a lid, it’s fair game. I pour in all the ingredients, give it a few good shakes, and add a ribbon. Poof! The perfect summer gift for anyone on your list!
1 t anchovy paste
1/2 C apple cider vinegar
1 C extra virgin olive oil
1/2 t oregano
1/2 t salt
1/4 t pepper
1 t garlic, finely diced
3 T cornstarch (I use finely ground tapioca starch and it’s great)
In a jar, place the paste, vinegar, and oil. Cap and shake well.
Add the remaining ingredients and shake well.
Serve over your favorite salad.
Next time you have a salad, don’t reach for the bottle of premade stuff! Make some Italian Salad Dressing and enjoy!

When the day is rainy and grey, I love to make something that will put a smile on the faces of my family. Hearty Italian Goulash is one such dish. Rich with ground beef, onions, and garlic, simmered in tomato sauce, and finished with elbow macaroni, Hearty Italian Goulash will make the rain seem not so dreary.
This recipe makes a whole pot of Hearty Italian Goulash, making this a perfect meal for a crowd or carry in. I usually can feed a family of 5 two meals with this dish, making it an economical choice, especially when I can get the ingredients on sale or with coupons. To make it go ever further, I serve it with a healthy green salad and crusty bread, making it a pretty filling meal.

One of the best things about Hearty Italian Goulash is that you can freeze the meat/sauce mixture for later meals. All you need to do is freeze it before you put in the pasta, then when you thaw it for your meal, boil the pasta and add it. You have a quick meal, any day of the week, that is filling and delicious.
2 lbs lean ground beef
1 large onion, diced
6 cloves garlic, sliced
1 large jar pasta sauce
1 large can tomato sauce
2 lbs elbow macaroni
Brown the ground beef with the onions and garlic in a stock pot. Drain any unwanted drippings.
Pour in the pasta and tomato sauces, rinsing out the jars with an equal amount of water.
Simmer on low for 2 hours.
Boil the elbow macaroni until al dente. Drain and add to the sauce, stirring to incorporate.
Cover and let sit 5 minutes .
Serve with crusty bread and a salad.
Next time the day is dreary, or you want to prepare meals ahead, make Hearty Italian Goulash!

I do everything I can not to throw away any leftovers. From meat to vegetables, I try to come up with new ideas to use up the things I have in my fridge. Earlier this week, I grilled a big batch of chicken with the hopes of eating salads every day. Well, life changes plans, and the salads didn’t happen, but I don’t want to throw away what I wasn’t able to put on salads. So, Italian Chicken Burritos it was! Everything I love about an Italian meal, stacked in a Mexican tortilla.
Start with a good, quality tortilla as your base. Warm it gently with a damp paper towel over the top to make it pliable. Chicken of just about every kind works well in Italian Chicken Burritos. I love marinated grilled chicken, but barbequed or roasted work well too. Some turkey pepperoni gives just a bit more spice to the flavor, and everything is topped off with some warmed pasta sauce and shredded mozzarella. I usually warm my Italian Chicken Burritos up in the microwave for a minute or so, just to warm everything up and meld the flavors together. You’ll have a delicious dinner in just minutes that even your kids will enjoy.

It only takes minutes to make up Italian Chicken Burritos, making it an amazing meal when your family has a tight schedule. Sometimes I even shred my chicken before I put the leftovers away, making Italian Chicken Burritos that much faster for my family.
2 C leftover chicken, shredded
1 C pasta sauce
1 pkg turkey pepperoni
8 oz shredded mozzarella
4 large burrito tortillas
Warm the tortillas gently in the microwave with a damp paper towel for about 30 seconds until they are pliable.
Place the turkey pepperoni in a line through the middle of the tortilla.
Top with the chicken, a few tablespoons of pasta sauce, and cheese.
Tuck in the sides and roll the ends up as you would a burrito.
Warm in the microwave for about a minute.
Serve warm.
Use up your leftovers in a new way and try Italian Chicken Burritos!
