Hearty Italian Goulash Makes an Awesome Rainy Day Meal
When the day is rainy and grey, I love to make something that will put a smile on the faces of my family. Hearty Italian Goulash is one such dish. Rich with ground beef, onions, and garlic, simmered in tomato sauce, and finished with elbow macaroni, Hearty Italian Goulash will make the rain seem not so dreary.
Feed a Crowd on a Budget with Hearty Italian Goulash
This recipe makes a whole pot of Hearty Italian Goulash, making this a perfect meal for a crowd or carry in. I usually can feed a family of 5 two meals with this dish, making it an economical choice, especially when I can get the ingredients on sale or with coupons. To make it go ever further, I serve it with a healthy green salad and crusty bread, making it a pretty filling meal.
Ingredients
- 2 lbs lean ground beef
- 1 large onion, diced
- 6 cloves garlic, sliced
- 1 large jar pasta sauce
- 1 large can tomato sauce
- 2 lbs elbow macaroni

Instructions
- Brown the ground beef with the onions and garlic in a stock pot. Drain any unwanted drippings.
- Pour in the pasta and tomato sauces, rinsing out the jars with an equal amount of water.
- Simmer on low for 2 hours.
- Boil the elbow macaroni until al dente. Drain and add to the sauce, stirring to incorporate.
- Cover and let sit 5 minutes .
- Serve with crusty bread and a salad.
Hearty Italian Goulash Freezes for Quick Meals Later
One of the best things about Hearty Italian Goulash is that you can freeze the meat/sauce mixture for later meals. All you need to do is freeze it before you put in the pasta, then when you thaw it for your meal, boil the pasta and add it. You have a quick meal, any day of the week, that is filling and delicious.
