We’ve all seen them standing there, tempting us as we get our skinny vanilla spice latte at Starbucks.  Round, delicious balls of cake on a stick, coated in some fabulous chocolate coating.  I figured there must be a way to make them at home, even with my kids, and there is!  Follow these easy instructions to make beautiful cake pops that are perfect for Valentine gift giving.

Ingredients

  • 1 box cake mix and ingredients to bake it (listed on the box)
  • 1/2 can frosting that compliments the cake flavor/color
  • 24 oz meltable candy coating, in a flavor that compliments your cake
  • 40 lollipop or cake pop sticks
  • Decorations such as nonpareils, sprinkles, nuts, etc
  • Long Styrofoam "plank"

Instructions

  1. Bake the cake in a 9x13 pan as directed on the package. Let cool.
  2. Crumble the whole cake into a large bowl.
  3. Microwave the frosting for about 20 seconds, making sure no foil is left on the package. Stir. If the consistency is soft and smooth, pour about half of the container into the crumbled cake and mix. Try to form a ping-pong sized ball. If the cake sticks together well without cracking, you can continue to make balls. If the cake cracks, add more frosting. (I usually use about 3/4 of the container.)
  4. Place the formed balls on a cookie sheet and freeze for 20-30 minutes, until chilled throughout.
  5. Melt the candy coating over a double boiler. When smooth and melted, dip the end of a stick into the coating and press into a cake ball, standing it on it's top so the stick is in the air. Continue with the remaining balls.
  6. Start with the first pop you worked with, dip in the melted coating, making sure to coat the whole pop. Let the excess drip back into the pan.
  7. Roll in sprinkles, nuts, etc. Press the stick into the Styrofoam and let it set. Continue with the remaining pops.
  8. Once they are hardened, you can place them in a sealed container for storage and enjoy!

Mandarin Orange Beef Crock-Pot Recipe

I love Asian inspired foods.  Veggies, rice, meats, and yummy sauces combine to make something fabulous and tasty.  This recipe is no different.  It takes a little bit more than other recipes to get it into the Crock-Pot, but the slow simmering can make even the toughest cut of meat into something tender and amazing!

Mandarin Orange Beef Crock-Pot Recipe

Ingredients

  • 2 lbs beef roast, sliced thin (check out the note below on how to make this task easy!)
  • 3 T Olive oil
  • 1 onion, sliced thin
  • 1 can water chestnuts, sliced
  • 2 heads baby bok choy, cleaned and sliced
  • 1 t grated fresh ginger
  • 1/2 C soy sauce
  • 1 4 oz pkg Shitake mushrooms, stems removed and caps sliced
  • 2 T corn starch
  • 2 C hot water
  • 2 T beef base
  • 1 can (11 oz) Mandarin oranges
  • 2 C rice
  • 4 C water

Instructions

  1. Freeze the beef roast for about 20 to 30 minutes. Remove from the freezer and slice into thin strips.
  2. Heat a saute pan over medium high heat. Add the olive oil and meat in small batches, cooking until brown on all sides. Place in the Crock-Pot.
  3. To the saute pan, add the onion and cook until softened and clear. Add the water chestnuts, baby bok choy, ginger, soy sauce, and Shitake mushrooms. Saute for about 3 minutes, until the bok choy starts to wilt a bit. Place it over the top of the beef.
  4. In a bowl, mix the water and beef base. When the beef base is dissolved, add the corn starch and drain the juice from the oranges into the bowl, refrigerating the oranges for later.
  5. Cover the Crock-Pot and set to low for 8 to 10 hours.
  6. About 30 minutes before serving, place the rice and water in a large saucepan. Heat on medium high heat until boiling, then turn down to simmer. Let simmer for about 20 minutes or until the water is absorbed. Fluff with a fork.
  7. To serve, top rice with beef mixture and sauce. Sprinkle with a few mandarin oranges and enjoy!

Try out this super easy Corned Beef in the Crock-Pot Recipe! Corned beef is one of those meats that people seem to look at in the grocery store, but never quite know what to do with them.  I’ve heard of some interesting cooking methods, from dropping the bag, still sealed, in a Crock-Pot of water and letting it simmer all day, to boiling the poor hunk of meat until it falls apart (and usually lacks flavor).

There was an older Irish woman in my neighborhood growing up.  This was her favorite way to cook the mysterious dish, which lends itself nicely to our busy lifestyles today.  What a better way to celebrate St. Patrick’s Day than a tasty corned beef brisket?  Pair it with some boiled potatoes and cabbage, and you have a feast fit for the saint!

If you’d like to have leftovers, if you have a very large Crock-Pot, you can add another brisket over top of the first, layering as listed below with seasonings and garlic in between.

Yield: Serves 4-6

Ingredients

  • 1 3-5 lb Corned Beef brisket, juice and season packet included
  • 1 Head Garlic, cloves peeled
  • 1/2 C Apple Cider Vinegar

Instructions

  1. Place the corned beef in the bottom of the Crock-Pot, fat side up.
  2. To the packaging, add the apple cider and swirl to dissolve the gel that was coating the meat. Pour over the top of the meat.
  3. Sprinkle the seasoning packet and garlic cloves over the meat.
  4. Cover and cook on low for 8 to 10 hours.
  5. Remove from the Crock-Pot, place on a plate or platter and enjoy!

I love a good fajita.  Chicken, beef, veggie, doesn’t matter.  They are all tasty.  But I hate paying so much for beef fajitas at restaurants.  I set out to conquer the mysteries of fajitas.

For the meat in my beef fajitas, I used NY strip steaks.  Woah!  That’s a pretty pricey meat for cheaper than restaurant fajitas!  Well, yes and no.  Shop sales.  Find a local butcher instead of the grocery store.  My NY strip was $3.29 per pound.  Much less than other cuts.  So shop wisely, and find a good deal on meat.

Ingredients

  • 1 lb beef or chicken, cut into thin strips
  • 3 peppers, cut into thin strips
  • 1 onion, halved and sliced
  • prepackaged fajita seasonings
  • pineapple, peeled, cored, and diced (optional)
  • small tortillas, flour or corn, warmed in the microwave with a piece of wet paper toweling
  • shredded cheese
  • salsa, guacamole, and sour cream

Instructions

  1. Heat your griddle to 400 degrees F.
  2. Sprinkle the seasoning over the meat and toss. Let marinate.
  3. When the griddle is hot, grill the onions and peppers on a dry surface, turning when they start to blacken. When the vegetables are slightly blackened but not limp, removed them to a bowl.
  4. Add the meat to the griddle, flattening each piece to ensure doneness. Once browned, turn over and cook until done throughout. Remove to a bowl.
  5. Repeat the process with the pineapple, if using. Remove from the griddle when caramelized on all sides.
  6. To assemble, place the toppings on your tortilla, fold and enjoy!

Tortillas are such a versatile food.  You can fill them with just about anything, from cheeses, to veggies and meats, to fruit.  They can replace bread in so many recipes.  I always have them on hand for snacks and quick meals.

I’ve found that making them at home is pretty inexpensive, and quite a bit of fun as well.  My kids love to join in on making them, manning the griddle while they brown.  What are you going to stuff yours with?

Ingredients

  • 1 C corn masa flour (found in the international section of most grocers)
  • 1/4 t salt
  • 3/4 C lukewarm water

Instructions

  1. Mix the flour and salt in a bowl. Slowly add the water, stirring to form a dough.
  2. Place the dough on a clean work surface sprinkled with a little flour, and knead the dough until smooth. Cut into 8 pieces. Cover the dough with a damp towel.
  3. Heat a griddle or flat fry pan to 400 degrees F or medium high.
  4. Take one piece of dough. Form it into a disk and place it on a piece of parchment paper. Cover with another piece and roll out the dough, working out from the center in all directions. When the dough is very thin, peel it from the parchment.
  5. Place the rolled dough on the griddle or pan. Cook until dry and brown, about 45 seconds. Flip and cook the other side until brown, about another 45 seconds.
  6. Remove to a plate and repeat with the rest of the dough.
  7. Top and fill as you like!

Ingredients

  • 1/4 C sugar
  • 1 1/4 C brown sugar
  • 1/2 C shortening (I love butter flavored in these)
  • 1 egg
  • 2 t vanilla
  • 1/4 C sour cream
  • 3/4 C pumpkin puree
  • 1 t baking powder
  • 1/4 t baking soda
  • 1 1/4 t ground cinnamon
  • 1/4 t ground nutmeg
  • 1/4 t ground ginger
  • 1/8 t ground cloves
  • 1 3/4 C flour

Instructions

  1. Heat oven to 350 degrees F.
  2. Cream the sugars and butter in a large bowl or mixer. Add egg, vanilla, sour cream, and pumpkin and mix well.
  3. In a separate bowl, combine the dry ingredients.
  4. Add to the pumpkin mix, a little at a time, until well incorporated.
  5. Drop by tablespoons onto a lightly greased cookie sheet. Bake 15-17 minutes until lightly browned and firm to the touch.
  6. Let cool slightly, then remove to paper toweling or waxed paper.
  7. Frost with your favorite frosting.

I frosted these with a cream cheese buttercream, and sprinkled pumpkin pie spice over the tops.  They didn’t last long in my house!

Pumpkin pie is a tradition for many families on Thanksgiving, and even on Christmas.  But who says it needs to be relegated to just one or two days a year?  Making a pumpkin pie is simple, and is a great way to get some of those tasty fruit things in our family.

In an earlier post, we showed you how to roast your own pumpkins easily.  Check out how here.  We also had a very easy post for pie crust here.  This pie recipe only makes one pie, so cut the ingredients of the pie crust in half for a single crust.  Once you have those two things, you are good to go with the rest of this!

Ingredients

  • 1 pie crust (see link above)
  • 3 eggs
  • 2 C Pumpkin puree (or 1 15 oz can pure pumpkin)
  • 1/2 C heavy cream
  • 1/2 C dark brown sugar (this will also work with light brown sugar, but is better with the dark)
  • 1/2 t ground ginger
  • 3/4 t ground cinnamon
  • 1/4 t ground nutmeg
  • 1/2 t ground allspice
  • 1/2 t salt

Instructions

  1. Heat oven to 375 degrees F.
  2. In a bowl or mixer, beat the eggs until slightly foamy. Add the rest of the ingredients and mix until well incorporated.
  3. Pour into your prepared crust. Bake 50-55 minutes, until a knife inserted in the center comes out clean. Cool and serve.
  4. This pie does need to be refrigerated, as it is a "custard" style pie.

Growing up, it was almost a rite of passage to be handed my great grandmother’s rolling pin and asked to roll out the pie crust.  Mom would start with a small ball, showing you how to roll it out smoothly.  Then, you’d get to make your own pie, using a tin saved from a Swanson pot pie.  When I was a teenager, and my friends would get together for a Friday night, or party, I’d be asked to bring pie.  It didn’t matter what kind, as long as I made it.  Friends were a little awed that I could do something as “complex” as rolling out pie crust.

But, here’s my secret:  it’s not hard.  You need a little bit of patience, and a few tricks, and you will roll out the best pie crusts.  Even if you don’t have a rolling pin, there are other things you can use.  When I moved out of my mother’s house, I used a wine bottle.  It was perfect.  I washed it off and it was ready to go.  Whatever you use, this recipe will help you make simple, easy pie crusts, and your friends will always ask you to bring the pies!

This recipe makes 2 9″ pie crusts, but you can cut the recipe in half if needed.

Ingredients

  • 2 C all-purpose flour
  • 1 C Butter flavor Crisco
  • 1/2 t salt
  • 1/4 C COLD water

Instructions

  1. In a mixing bowl, use a fork to cut the Crisco into the flour and salt. The mixture should look a bit dry and crumbly.
  2. Add the cold water, a little at a time, and mix thoroughly. The dough will come together. Form it into a ball, place it back in the bowl, and cover tightly with plastic wrap.
  3. Prepare your rolling surface for easy cleanup. Wipe down the counter with a damp rag, leaving the surface wet. Place two sheets of plastic wrap over the wetness, one beside the other, but overlapping about an inch. Press flat to the surface. Cover with a generous dusting of flour, and make a small pile of flour off to the side, out of the way of your rolling.
  4. Cut the dough in half. Form into a disk with your hands and place on your flour covered surface.
  5. Sprinkle the dough and your rolling pin with flour. This will keep it from sticking to your crust. Start by rolling from the center outwards, first in a "+" pattern, then a "*" pattern. Add more flour to keep your rolling pin from sticking. Continue rolling until your crust is about 1/8" thick and large enough for your pie pan. It should overlap the edge of your pan by at least the depth, as shown.
  6. Sprinkle a little more flour over the crust. Place your rolling pin near the edge of your crust. Gently lift the edge and roll onto the pin, as if rolling wrapping paper back on the holder. Roll back over your pie pan, gently pulling the edges in to allow the crust to fall to the bottom. If the crust should break, just press it back together with a drop of water. If you are making a one crust pie, cut your leftovers or roll them under, as your preference.
  7. Add your filling, and bake, or roll out the other half of the crust and top the pie, sealing the edges by rolling them together. Brush with milk to create a beautifully browned crust.
  8. Bake as instructed for your pie.
  9. Carefully lift up the plastic wrap, turning the corners into the center to contain all the leftover flour. Toss it in the trash for easy cleanup!

I’ve been reading a lot of herb magazines lately, and one thing they all seem to agree on is shitake mushrooms have some wonderful health benefits, especially when you are sick.  So, I’ve been playing with a recipe that is simple enough to make, even if you have the flu, but tasty enough that the whole family can enjoy.  I’ve tested it on a few sick friends who say they love it and felt a bit better after eating it.  Now, I can’t say if it’s the mushrooms, the easy-on-your-tummy feeling, or the warming sensation of soup, but if they like it, I will make it!  Here’s my not-so-secret recipe!

Ingredients

  • 8 oz Shitake mushrooms
  • 7 cloves garlic, peeled and sliced
  • 1 32 oz container vegetable stock

Instructions

  1. Remove the stems of the mushrooms, wipe off any debri, and slice the caps.
  2. Place the mushrooms and garlic in a medium saucepan. Add the vegetable stock and simmer for 2 hours, replenishing the liquid with water as needed. Serve with crackers or bread. Mushrooms may be removed if not liked or tolerated, as all the "goodness" is simmered into the soup.
