Mango Strawberry Mojito Salad ~ Bring Summertime to Your Table
In the midst of the winter blahs, here’s a salad that can brighten your day and make your taste buds sing. Bright tropical mango blends with tart strawberries and mint to remind you of warm summer days, sitting on the patio and sipping minty mojitos. Fresh lime and honey combine for a sweet and sour dressing that will knock your socks off in this Mango Strawberry Mojito Salad.
Wild Rice Rounds Out Mango Strawberry Mojito Salad
An earthy wild rice blend gives a tasty bite to the salad, making it filling as well as healthy. Mango Strawberry Mojito Salad is a great alternative to macaroni salad, especially for those who have a gluten or wheat intolerance. It’s an amazingly tasty way to cut gluten and not miss it.
Ingredients
- 1 1/2 C wild rice blend
- 2 1/4 C water
- 1 cucumber, seeded and diced
- 1 can garbazo beans, rinsed
- 1 mango, peeled and seed removed, diced
- 1/2 C strawberries, washed c and diced
- 1 jalapeño, seeded and diced (optional)
- 3 green onions, sliced thin
- 1 lime, juiced
- 2 T honey
- 2 T olive oil
- 1/2 C mint, leaves cleaned and chopped

Instructions
- In a large saucepan, place rice and cover with water. Bring to a boil and turn to a simmer. Simmer 15-20 minutes until water is absorbed.
- In a large bowl, whisk the honey, lime juice and olive oil.
- Add the fruit, vegetables, and rice. Toss to coat.
- Chill for at least an hour.
- Serve with your favorite meal.

Since Mango Strawberry Mojito Salad has a lime juice and oil dressing, you don’t have to worry about leaving it out in warmer weather. There’s no mayonnaise to go bad, and the flavors will be more vibrant as the salad gently warms.

Mandarin Orange Beef Crock-Pot Recipe
I love Asian inspired foods. Veggies, rice, meats, and yummy sauces combine to make something fabulous and tasty. This recipe is no different. It takes a little bit more than other recipes to get it into the Crock-Pot, but the slow simmering can make even the toughest cut of meat into something tender and amazing!
Ingredients
- 2 lbs beef roast, sliced thin (check out the note below on how to make this task easy!)
- 3 T Olive oil
- 1 onion, sliced thin
- 1 can water chestnuts, sliced
- 2 heads baby bok choy, cleaned and sliced
- 1 t grated fresh ginger
- 1/2 C soy sauce
- 1 4 oz pkg Shitake mushrooms, stems removed and caps sliced
- 2 T corn starch
- 2 C hot water
- 2 T beef base
- 1 can (11 oz) Mandarin oranges
- 2 C rice
- 4 C water

Instructions
- Freeze the beef roast for about 20 to 30 minutes. Remove from the freezer and slice into thin strips.
- Heat a saute pan over medium high heat. Add the olive oil and meat in small batches, cooking until brown on all sides. Place in the Crock-Pot.
- To the saute pan, add the onion and cook until softened and clear. Add the water chestnuts, baby bok choy, ginger, soy sauce, and Shitake mushrooms. Saute for about 3 minutes, until the bok choy starts to wilt a bit. Place it over the top of the beef.
- In a bowl, mix the water and beef base. When the beef base is dissolved, add the corn starch and drain the juice from the oranges into the bowl, refrigerating the oranges for later.
- Cover the Crock-Pot and set to low for 8 to 10 hours.
- About 30 minutes before serving, place the rice and water in a large saucepan. Heat on medium high heat until boiling, then turn down to simmer. Let simmer for about 20 minutes or until the water is absorbed. Fluff with a fork.
- To serve, top rice with beef mixture and sauce. Sprinkle with a few mandarin oranges and enjoy!
