Greek Pasta Salad for Your Favorite Picnic

Greek Pasta Salad, with tangy tomatoes and salty feta cheese, makes a fantastic picnic accompaniment.  Al dente pasta is a delicious base for the simple dressing that graces this dish.  And the oil and vinegar dressing does a great job at holding flavor, without becoming weird and icky, like a mayo based dressing.  So if you take Greek Pasta Salad to a picnic, the dressing can take the heat without changing!  And with the summer months coming quick, Greek Pasta Salad is perfect.

Need an even Simpler Dressing for Greek Pasta Salad?

If you are in a hurry, or don’t want to have bottles of olive oil or vinegar around the house, grab a bottle of your favorite Greek dressing at the grocery store.  One of my favorites is Newman’s Own Greek Vinaigrette dressing.  It has a fantastic fresh flavor that is just like homemade.  Choose a dressing you love, and you’ll have a Greek Pasta Salad that is the best you’ve ever had!

Delectable Greek Pasta Salad ~ Perfect for Summer Picnics!

Ingredients

  • 1 lb mini penne pasta
  • 1 tub yellow pear tomatoes
  • 1 tub red grape tomatoes
  • 6 oz pkg crumbled feta cheese
  • 1/2 C olive oil
  • 1/2 C apple cider vinegar
  • 1 T dried oregano
  • salt
  • pepper

Instructions

  1. Boil the pasta until al dente. Drain and rinse in cold water to stop the cooking. Place in a large bowl.
  2. Cut the tomatoes in half and place in the bowl.
  3. Gently mix in the feta cheese.
  4. Add the oil, vinegar, and oregano. Stir well. Season with salt and pepper.
  5. Refrigerate at least 4 hours. Overnight is preferable.
  6. Serve chilled.

Greek Pasta Salad for a Week of Easy Dinners

I almost always double the recipe and make a HUGE batch of Greek Pasta Salad, giving me a week of easy dinners.  All I have to do is grill some meat and veggies for a well rounded meal in minutes.  To change it up as the week goes on, simple add something new every night, such as some olives, pepperoni, or even mild peppers.

 

1 lb mini penne pasta

1 tub yellow pear tomatoes

1 tub red grape tomatoes

6 oz pkg crumbled feta cheese

1/2 C olive oil

1/2 C apple cider vinegar

1 T dried oregano

salt

pepper

 

Boil the pasta until al dente.  Drain and rinse in cold water to stop the cooking.  Place in a large bowl.

Cut the tomatoes in half and place in the bowl.

Gently mix in the feta cheese.

Add the oil, vinegar, and oregano.  Stir well.  Season with salt and pepper.

Refrigerate at least 4 hours.  Overnight is preferable.

Serve chilled.

 

Grilled chicken makes it a complete meal, too!  Get creative and take this simple Greek Pasta Salad to your table with your own touch!

Crispy Pierogies with Onions are an amazingly quick and tasty dinner, any night of the week.  Pierogies are a Polish dish comprised of a sheet of pasta wrapped around a wonderful filling of mashed potatoes and a few savory additions, such as cheddar, 4 cheese, onion, or spinach and feta cheese.  You can find them in the freezer section of your favorite grocery store.

Crispy Pierogies with Onions Makes an Amazing Meal

To take these simple pockets of goodness and turn Crispy Pierogies with Onions into a meal, add an easy to make meat, such as brats or a meatloaf, and a veggie.  Our favorite is braised spinach or a salad.  Crispy Pierogies with Onions can also be paired with something more sophisticated, like a Crock-Pot full of Beef Burgundy!

Make a Quick Meal with Crispy Pierogies with Onions

You can have Crispy Pierogies with Onions from freezer to table in about 30 minutes, making a perfect weeknight meal, even when you are on the go with kid’s events or meetings.  They also make fantastic leftovers for lunch the next day.   A quick trip through the microwave and these will give you the fuel to finish your day!

Crispy Pierogies with Onions Recipe ~ Great for Quick Meals!

Ingredients

  • 2 boxes frozen pierogies
  • 3 large onions, sliced thin
  • olive oil
  • butter
  • sour cream

Instructions

  1. In a large saute pan, place a thin layer of olive oil, about 3 tablespoons. Heat to medium.
  2. Add the onions and saute until clear and turning brown.
  3. Heat water to boiling in a 3 qt or larger saucepan.
  4. Add the pierogies and boil until they float. Remove to a bowl to let them drain.
  5. Remove the onions from the pan when clear and starting to brown. Set aside.
  6. Add 2 tablespoons oil and 2 tablespoons butter to the saute pan. When the butter is melted, carefully add pierogies to fill the pan. Saute until brown; flip and brown on the second side.
  7. Serve with onions and sour cream, if desired.

About once a month, pierogies go on sale at my favorite grocery store.  Add a couple of coupons with that, and I average about $1.75 per box of 12, making Crispy Pierogies with Onions one of my favorite inexpensive meal additions.  I keep several boxes in the freezer for those emergency quick dinners when the day gets away from me.

Find these amazing satchels of taste in your freezer section and keep them in your freezer for the one night you forget to plan for dinner.  Crispy Pierogies with Onions will fill your tummy as well as your soul with the ultimate in comfort food.

 

2 boxes frozen pierogies
