Cheap Vegetarian Recipes: Asian Noodle Soup for What Ails You

It never fails.  Every summer, someone in my house gets a cold.  We’ve tried every remedy, from chicken soup to over the counter medicines, but what works best is Cheap Vegetarian Recipes: Asian Noodle Soup.  It has the old standby of broth, but it’s made better with a bit of miso paste.  Shitake mushrooms are well known in Asia for their healing properties, and noodles, of course, make everything go down easier.  Best of all, it takes 20 minutes from boiling to table for this wonderful soup to start doing it’s job!

Finding Ingredients for Cheap Vegetarian Reicpes: Asian Noodle Soup

Most everything in this soup can be purchased at your regular grocery store.  Miso paste is usually found in the refrigerated section of an Asian grocery, and the dried seaweed in the dry goods aisles.  The shitake mushrooms, tofu, noodles, and soy sauce can be find in your favorite grocery, or the Asian grocery.  I try and do a one stop kind of shopping, but my miso paste and seaweed have lasted for several batches, so I don’t have to go back for those very often.

Cheap Vegetarian Recipes: Asian Noodle Soup

Ingredients

  • 1 gallon water
  • ¼ C miso paste (red or white)
  • 8 oz Shitake mushrooms, stems removed and discarded, tops sliced
  • 6 cloves garlic
  • ¼ C dried seaweed
  • 1 pkg Chinese noodles
  • soy sauce

Instructions

  1. Heat the water in a large stockpot with the miso.
  2. When the water starts to steam, add the mushrooms and garlic. Let simmer 15 minutes.
  3. Add the seaweed and break up the noodles, then add

While I love to serve Cheap Vegetarian Recipes: Asian Noodle Soup to my sick family, we also love it any time.  It’s great in the summer as a quick dinner on cooler rainy nights, or as a quick lunch you can heat up at work.

1 gallon water

¼ C miso paste (red or white)

Country Bratwurst Potato Chowder is Perfect for Rainy Days

Have you ever gotten some brats out of the freezer, only to have your picnic or backyard barbeque rained out?  Or like me, maybe it started to snow?  Or maybe you’re just tired of the same old grilled brats.   Well, Country Bratwurst Potato Chowder is a reimagined potato chowder that will knock your socks off.  Creamy and savory, Country Bratwurst Potato Chowder will fill you up and your family will love it.

What Brats to Use with Country Bratwurst Potato Chowder?

I buy my brats at a little family run store that makes their own by hand.  They have six to eight flavors, depending on the day you shop.  This time, I used Italian brats (not sausage…the flavor is slightly different) for a spicy flavor.  The bacon cheddar brats are also amazing in Country Bratwurst Potato Chowder.  I opted to stay away from the wonderfully sweet Hawaiian brats, thinking the pineapple and brown sugar flavor would probably not be as savory as I was looking for.  Use a brat you love and you will have an amazing Country Bratwurst Potato Chowder.

Country Bratwurst Potato Chowder ~ Bring the Barbecue Inside!

Ingredients

  • 1 lb bratwurst
  • 3 large potatoes, scrubbed and cubed
  • 1 medium onion, diced
  • 4 cloves garlic, sliced
  • 3 carrots, cut into rounds
  • 3 ribs celery, diced fine
  • 3 bay leaves
  • 2 C white wine
  • 1 C heavy cream
  • 2 T potato starch or all purpose flour
  • Salt
  • Pepper

Instructions

  1. Place the brats in a frying pan and brown on all sides. Remove from the pan and let cool slightly. Slice into 1/2 inch rounds and return to the frying pan, browning the cut sides.
  2. Place the potatoes into a large pot and cover with water. Sprinkle with salt and boil until soft. Do not drain.
  3. Remove the brats from the pan and set aside. To the pan, add the onion, garlic, carrots, and celery. Sauté until nearly tender. Add the white wine to deglaze the pan and simmer for 1 minute.
  4. Place the brats and vegetables into the pot with the potatoes. Add enough water to cover the ingredients with an extra 2 inches of water.
  5. Add the bay leaves and simmer for 10 minutes.
  6. In a bowl, mix the cream and starch until no lumps remain. Season to taste with salt and pepper.
  7. Stirring the simmering soup, add the cream slowly to thicken.
  8. Serve with crusty bread and a salad!

If you are having a gathering, or just want to graze all day, make up the Country Bratwurst Potato Chowder and keep it warm in a Crock-Pot.  The flavor will intensify and you can eat it at any time!

 

1 lb bratwurst

Fabulous French Onion Soup is a Crowd Pleaser!

 Fabulous French Onion Soup tastes like it is complicated to make, but it’s the simplest soup I know of.  Strong onions simmer to sweetness, leaving a rich, full flavor accentuated with fresh bay leaves, beef stock, and burgundy wine.  Just a few ingredients and will make Fabulous French Onion Soup a favorite for gatherings, holidays, and every day.

Ingredient Notes for Fabulous French Onion Soup

I usually purchase the strongest Spanish onions I can find for this recipe.  The initial saute of the onions will leave your eyes watering, but will give the soup a fabulous flavor.  Slice them thin with a knife or mandolin if you have one.  The mandolin will make quick work of the slicing, leaving you tear-free, or nearly so.  Slice them on the “thick” setting, or about 1/8 to 1/4 inch thick for best results.

For beef stock, I’ve found a good stock is best, as the flavor is thick and hearty.  Beef broth or bouillon tend to be really salty, and one the salt is in, it’s hard to get it back out.  Find a quality stock that you like or make your own from beef and bones by simply boiling them for a few hours.  Use what you like in Fabulous French Onion Soup for a taste you’ll love.

I’ve often heard people say that you should never cook with a wine that you wouldn’t drink.  Well, I don’t think I’ll ever drink burgundy, but I love to cook with it.  I purchase big bottles when they are on sale for about $10.  It lasts me over a year typically, as I really only use it in the winter for Crock-Pot dishes and soups.  Keep it in a cool place and the flavor won’t change while you use it up.

Fabulous French Onion Soup Recipe

Ingredients

  • 5 lbs Spanish Onions, peeled and sliced thin
  • 1 stick butter
  • 3 C burgundy wine
  • 3 32 oz boxes beef stock
  • 3 bay leaves, fresh or dried
  • 1 loaf French bread, sliced into 1 inch thick rounds
  • 1 lb Gruyere or Swiss cheese, shredded

Instructions

  1. Melt butter in a large stockpot over medium heat. Add onions and saute until tender and starting to brown.
  2. Add burgundy and reduce by 50%.
  3. Add the stock and bay leaves. Simmer 2-3 hours, replacing fluid with water if needed.
  4. While the soup is simmering, heat oven to 425 degrees F. Lay the bread out, cut side up, on a baking tray. Sprinkle with cheese and bake until cheese is melted and starting to brown slightly.
  5. To serve, place a piece of bread in the bottom of a soup bowl. Ladle hot soup over the top and serve.

Fabulous French Onion Soup Makes a Great Crock-Pot Meal

Once you get to the stage that the wine has reduced, pour the onion-burgundy mixture into your large Crock-Pot and set it to low.  It will simmer and stay hot for any buffet, gathering, or holiday.  Place a bowl of cheese bread next to it and your guests can serve themselves any time they want some soup.  Fabulous French Onion Soup makes a perfect starter for any meal.
