Mango Strawberry Mojito Salad is Perfect for Picnics

Since Mango Strawberry Mojito Salad has a lime juice and oil dressing, you don’t have to worry about leaving it out in warmer weather.  There’s no mayonnaise to go bad, and the flavors will be more vibrant as the salad gently warms.

1 1/2 C wild rice blend

2 1/4 C water

1 cucumber, seeded and diced

1 can garbanzo beans, drained and rinsed

1 mango, peeled and seed removed, diced

1/2 C strawberries, washed c and diced

1 jalapeño, seeded and diced (optional)

3 green onions, sliced thin

1 lime, juiced

2 T honey

2 T olive oil

1/2 C mint, leaves cleaned and chopped

In a large saucepan,  place rice and cover with water. Bring to a boil and turn to a simmer.   Simmer 15-20 minutes until water is absorbed.

In a large bowl, whisk the honey, lime juice and olive oil.

Add the fruit, vegetables, and rice.  Toss to coat.

Chill for at least an hour.

Serve with your favorite meal.
